Tuna Lettuce Wraps


Dinner last night turned out far better than I had expected. I made Tuna Lettuce Wraps and they were delicious. In fact, I want more! Tonight will probably be leftover corned beef with steamed potatoes and green beans. We have errands to run after work to get everything for Annyka's birthday. Seven years ago today I was on bedrest not actually believing I'd be having a baby two days later (and seven weeks earlier than intended)!

Tuna Lettuce Wraps

1 package of Starkist Sweet & Spicy Tuna Creations
2 cups steamed rice
½ bell pepper, diced
½ onion, diced

1 tsp sesame oil
1 tsp canola oil
1 tsp soy sauce
1 head iceberg lettuce, cut in half, then separate into leaves

Heat skillet on medium-high heat. Add oils. Once oil is hot, add bell peppers and onions until lightly sautéed. Add rice and tuna to skillet. Mix until warmed through. 

Serve mixture in lettuce leaves. If preferred, chop lettuce and serve tuna mixture over lettuce like a salad.


Tonight will probably be leftover corned beef with steamed potatoes and green beans. Boring, but tasty.
